Citrus Chicken with Cilantro Barley

Chicken breast smothered in an orange marmalade with orange and lime juice, red pepper flakes and minced garlic and baked to perfection. Served with a cilantro barley and strips of red, yellow and orange peppers. Enjoyed a glass of Crios Rose...a great accompaniment to a light Spring/Summer meal.
