Cheese Quesadilla and Gazpacho

I prepared Emeril's Spanish Style Gazpacho Soup that adds strawberries and watermelon to the traditional ingredients....so refreshing after a morning of yard work. I served the gazpacho in 3 ounce shot glasses accompanied by a cheddar/goat cheese quesadilla and coriander chutney. A glass of Calfornia Mourvedre Rose wine was the perfect beverage for a summer afternoon.
