Asian Beef Short Ribs & Oriental Stuffed Tomatoes

I'm taking advantage of the wonderful tomatoes this season.  Last evening I prepared Oriental Stuffed Tomatoes. I stuffed them with bean sprouts, green and red peppers and scallion with a soy vinaigrette.  They complimented the Asian Beef Short Ribs and Fried Rice.  The short ribs were braised for 3 hours with a mixture of soy sauce, rice wine vinegar, garlic, lemongrass, ginger, brown sugar, scallions, crushed red pepper flakes and orange juice.  The short ribs were tender and delicious and the sauce was spectacular!
