Mediterranean Eggplant Steaks - March 20, 2010

Prepared Rachael Ray's recipe for Grilled Eggplant Steaks that were first grilled then topped with spinach, roasted red peppers, hummus and breadcrumgs and baked in the oven. Accompanied this with a tomato feta salad and a Spanish rose wine. Delicious to celebrate the first day of Spring - sunshine and warm temperatures topped off with a great dinner!
