Spicy Peanut Sauce:
1 teaspoon peanut oil
1/4 cup peanut butter
2 tablespoons fresh lime juice
3 tablespoons hot water
2 tablespoons soy sauce
2 teaspoons ground fresh chili paste
1 garlic cloves, pressed
1/4 t. pure sessame oil
Saute the garlic in the peanut oil and combine remaining ingredients. Keep warm while cooking the penne pasta. Add penne to sauce and add pasta water to reach desired consistency. Serve topped with strips of raw carrot, cucumber, scallions and 3 pieces of cooked chilled shrimp. Garnish with cilantro.
I served this with a fruit salad of fresh strawberries, blueberries and pineapple.
