Chicken Cacciatore with Polenta

This evening's dinner was Chicken Cacciatore with red and green peppers, mushrooms, carrots, celery, onions and chicken with a strip of bacon for flavor. Served with baked polenta from the Joy of Cooking cookbook. Gruyere, Mozzarella and Parmeasan Reggiano cheeses were layered between the polenta and baked to a crisp texture. The polenta complimented the Chicken Cacciatore perfectly!
