Autumn Salad with Cider Vinaigrette


This evening's salad combined frisee and endive lettuces in an apple cider vinaigrette mixed with roasted yam, dried apricots, apples, beets, toasted walnuts and goat cheese.  I added sliced chicken that was cooked in cider, cinnamon and rum.  Fantastic!
