The combination of the sweet pineapple, onion, garlic red bell pepper with fried rice, shrimp, egg and cashews was fantastic. A bit of soy sauce and fish sauce pulled it all together.
I served with a hot and sour soup that I made from chicken thighs, mushrooms and tofu in a chicken stock with rice vinegar and soy sauce and a touch of sessame chili oil and finished off with an egg swirled through the soup
