Pad Thai & Larb

While watching Guy Fieri on Diners, Drive-Ins and Dives, I was introduced to Thai Larb Salad prepared at a restaurant in Hawaii ....I  just had to recreate it.  The dish had a wonderful variety of flavors and textures that combined ground pork, lemon grass, green chili, fresh lime juice, fish sauce, red onion, fresh mint and cilantro along with finely chopped peanuts served in lettuce wraps.  I also made chicken Pad Thai. Both dishes were amazing!
