Eggplant Lasagna

I recently created an eggplant dish that completely met our craving for an Italian meal.  Layers of roasted eggplant slices, red pepper.  A mixture of ricotta cheese,  Parmesan Reggiano and beaten egg was the filling between the layers.  It was then covered in a marinara sauce and baked. Delicious!  We served it with a tossed salad and a glass of Cabernet.
