Asian Chicken -Noodle Salad

With temperature in the 90's it was a great evening for a cold salad. I grilled chicken and basted with some of the apricot-sessame dressing. The chopped chicken was then combined with early spring peas, crunchy red pepper strips, mushroooms, scallions, noodles and then tossed with the apricot-sessame dressing and sessame seeds. I refrigerated the salad then headed to the pool to cool off!
