With the bounty of tomatoes this season from the farmers markets, I took 2 of the yellow tomatoes and made Oriental stuffed tomatoes....diced green and red peppers and celery combined with the tomato pulp and marinated in a soy vinegarette. Served with fried rice and a hot and sour soup with a twist. I subsituted chicken for the traditional pork and added some miso.... it was fantastic!
